The perfect cup of Zancona coffee starts with choosing the very best, evenly sized “green” coffee beans from our small, select group of Boquete coffee producers. And it ends with an unforgettable, perfectly balanced, delicious cup of one of the best Panamanian coffees you can buy.

Roasting coffee, a journey through the senses…

The fine art of roasting is our specialty and Andres, our Panamanian roaster has many years of training and experience working with the top coffee producers in Boquete.


With his superlative talent and skills, he roasts Zancona coffee to absolute perfection!


There are no automated machines – he hand-roasts in small batches using a journey through the senses combining the sights, sounds and smell necessary for this delicate process. Andres brings out the very best in the coffee beans to make sure you end up with the perfect cup.

Grinding from Whole Beans…

To enjoy the full taste of Zancona coffee, we recommend using a French Press or Cafetière.  You need a medium grind and around 1 1/2 – 2 tablespoons per cup(depending on taste). This will give you a full flavoured, medium to strong cup of coffee.

Water and water temperature…

Always use the purest, freshest water to make the perfect cup of coffee. Filtered or bottled water is best. Boil the water and let it cool down for about 1 minute.  Pour over the grounds in your French Press.

…Brew time!

Ideally you need to allow the coffee to swell and brew for about 5-7 minutes. Once the time is up, gently press the filter down into the French press until all the grounds are at the bottom. Pour and Enjoy!
